Star-Spangled Fruit Tart

1 tube (18 oz) refrigerated sugar cookie dough, softened (you can use homemade cookie dough, like I did, but why make it harder than it has to be?)
1 pkg. (8 oz) cream cheese, softened
1/4 cup sugar
1 tsp. vanilla or almond extract
1 cup fresh blueberries
1 cup fresh strawberries, halved
1 cup fresh raspberries (optional)

Press cookie dough onto an ungreased pizza pan or for a thicker crust use a pie pan.  Bake at 350 degrees for 10-15 minutes (until a golden brown.)  Let cool.

In a small bowl, beat the cream cheese, sugar, & vanilla until smooth.  Spread over cooled crust.  In center of tart, arrange berries in the shape of a star.  Add a berry border.  Refrigerate until ready to serve.  Yields: 16 servings.

  1. SIX servings? How big are those servings?! I used a bigger pizza pan {all I have!} and it made enough to feed an army! It was only a 14 inch, and I didn't press it out all the way so that it would still be thick and soft. I would say there's at LEAST 12 servings there, especially since it's so rich... but perhaps those serving suggestions were made by those who eat more than their fair share {me me me me me!} and enjoy delicious treats! :O) And it looks BEAUTIFUL!

  2. Oops! Typo - it's supposed to say 16. Thanks for catching that Tiff! (If you do it in a pie pan it'll probably be closer to 12.)
